How is Chunmee green tea made?
In general, the steps of the green tea production line include harvesting, frying, rolling, drying, shaping, and packaging. The manufacturing process of Chunmee Green Tea is similar, however, there are some differences in the process due to the special shape of this tea, therefore it forms a distinctive process.
After plucking the fresh tea leaves, they must be dried to prevent fermentation, which stops any enzyme activity that causes oxidation. The leaves are hand-rolled and pan-fired giving the tea leaves a unique shape and flavor. The tea leaves must be stirred constantly for even drying.

Harvesting
This is the first important step, people will choose the best time to pick young tea, only bud and 2 top leaves picked for good quality tea.. Normally, after picking, it will be processed immediately to ensure the freshness and quality of the tea.

Frying/Steaming
This is the stage where high temperature is used to lock the fermentation process of the tea leaves so that the chlorophyll cells in the tea leaves are not destroyed by the enzyme, and the tea still retains its natural green color when brewing. This step affects the quality of the tea, helping the tea to retain vitamins, catechins, tannins, and other nutrients.

Rolling
Rolling affects the appearance of the tea. Tea leaves are crushed about 30-35 %, then meet the requirements set for this stage. Compared with the traditional method, the roll forming machine ensures the required stamping according to the standard.

Drying/Shaping
After rolling, the tea will go through a drying machine, drying the tea down to a moisture content of 3-5% to preserve it longer, and the leaves will be crispy. Drying tea also enhances the aroma of tea, creating a characteristic taste.
