In the next part, we would like to introduce the basic steps to process green tea in Vietnam.
FGC has factories in the main tea regions of Vietnam, producing different types of tea. Tea masters in each factory may have their own know-how, but in general, all of our green teas go through the following manufacturing process:
Harvesting
Standard raw materials used in tea production are tea buds with two or three youngest leaves, 4-15 cm long and 2-5 cm wide. The materials should be put into processing within 1-2 days, as soon as possible.
Fresh leaves manually picked during spring to early summer (about February to April) are the best for high quality Vietnamese traditional green tea. Despite this, we can still produce good green teas from May to November.
Pan Frying/Steaming (Fixation)
Fixation is the key step that determines the aroma and color of green tea.
This process is executed by moderately using high temperatures to destroy the enzyme system of the leaf, suspend the oxidation of substances, maintain the natural color and taste of materials, and initially create the fragrance for the tea.
There are many fixation methods, however, most FGC factories use pan-frying or steaming to make green tea.
In the past, we used the traditional pan-frying technique. Nowadays, with advancements in technology, tea leaves are fried in a rolling drum to save time and labor.
Some of Vietnamese green teas (OP for Jasmine tea, Tencha for Matcha) are cooked by steaming, using steam with high pressure and temperature.
After the steaming step, the remaining moisture of tea leaves is about 59-65%. A part of the water content is then evaporated so the tea leaves become soft and convenient for rolling.
Rolling
The purpose of this step is to crush the cells of the leaves so that the tea essence escapes to the surface. After drying, tea leaves become more glossy, tightly curl and reduce in size. Tea essence easily dissolves into the water while brewing.
Most of FGC’s factories use modern rollers for this step. Sieve sometimes is used to preventing the tea from clumping and also has the effect of cooling the leaves, avoiding possible oxidation.
Drying/ Shaping
This step reduces the moisture content of the leaves from around 59-65% to 3-4%, allowing chemical reactions to occur, transforming the components and resulting in the tea’s signature aroma and flavor.
The tea can be dried using a conveyor dryer, a drying oven, or a pan. Our tea masters can skillfully combine methods and dry for a few times if necessary. The shape of the tea leaves is also formed during this process.
One thing to note is that all the steps above including this one must be done quickly right after the other so the essence and flavor of the green tea can be kept whole.
Sorting
Semi-finished tea will be put through a grading machine to divide into different categories (like mentioned above)
This grading also indicated which part of the tea leaves that the final Vietnamese green tea product came from.
Upgrading
Depending on quality requirements, our tea masters at factories can be flexible in procedures, even repeating a step several times. Before packing, some teas can be sorted or extra processed to have a stronger aroma and nice appearance.
Packaging
The tea is often packed in PP/PE bags for storage or transported to our main packaging factory. Exported tea can be packed in various types of packages according to the clients’ requirements.
Vietnamese green tea is an agricultural product, so the production process is not based on a single formula. Depending on the season, climate, and tea variety, FGC’s tea managers can adjust harmoniously according to their own experience to ensure good quality for you.
