3. Vietnamese black tea CTC manufacturing process
As mentioned above, the name of black tea CTC comes from the process of crushing, tearing, and curling. Without those steps, the method of producing black tea CTC is quite similar to that of Orthodox Black tea.
For more details, please follow the production process of Vietnamese CTC black tea in brief as follow:
Step 1: Selecting raw materials
Farmers harvest fresh tea buds in tea plantations. The perfect tea buds are the one with 3 young leaves on top, that formed a distinct shape. Quality controllers carefully inspect after transporting the fresh ingredients to the factory. Then, workers will wither immediately to save its freshness.
Step 2: Wither green leaves
The purpose of the process is to reduce the amount of water in the green leaves. It will increase the concentration of substances in the cytosol and therefore helps to increase the activity of oxidizing enzymes. The percentage of water in tea will be reduced to 62-63%. Tea leaves are soft but not broken.
Step 3: Grinding the product into black tea CTC
The process is to reduce the size of raw material and increase the volume of tea leaves for more efficiency in the following cutting stage. After grinding, the raw materials reach the cell stamping rate of over 50%, without any coarse impurities.
Step 4: Cutting the tea
The purpose is to break down the cellular structure of the tea leaves. At the same time, it releases the fluid in the tea leaves, creating favorable conditions for the enzyme system to contact the solute components, tannins, and organic compounds.
Step 5: Shaping black tea CTC
The step aims at shaping the Vietnamese CTC black tea products. The circular sieve moves in a circular motion, which helps tea leaves to be rolled into pellets of different sizes.
Step 6: Fermentation
It is the primary step in the processing of black tea. The fermentation process starts from the cutting stage until the end of fermentation. After fermenting, it will pass through the vane part to be beaten evenly to the brewing stage.
Step 7: Drying tea
Using high temperatures to suspend enzyme activities, immobilize specific substances formed during fermentation. At the same time, dry tea to the specified humidity to ensure stable product quality. Raw materials turn from red copper to dark brown and a typical aroma of CTC black tea.
Step 8: Sorting
This process is to classify the teas in order to best suit the requirements of buyers and consumers, convenient for pricing and storage.
The tea is pre-screened to remove most of the fiber and impurities. Then go through the sorting machines. Depending on the size of different large and small tea particles, they will pass through the corresponding sized sieve holes to be classified into separate types.
