Sencha is a very famous Japanese green tea, but it is first and foremost a steaming-based method for drying fresh leaves. Therefore, sencha can be made anywhere. FGC makes a Vietnamese Sencha tea version from fresh green leaves grown in our own tea gardens, and the product has recently become fairly popular in the market.

1. Advantages of Vietnamese sencha tea

Like every other green tea, there are many well-known benefits of sencha tea such as weight control and strengthening the immune system. In terms of taste, sencha green tea has an uplifting and refreshing taste to it. Its fruity aftertaste makes it perfect for iced tea in summer.

With all of the benefits it has and its refreshing taste, it can make for a perfect morning drink to start your day. However, as the truly original Japanese sencha price is very expensive, it can reach 10-15$ per kilo.  With the expectation of bringing sencha to more consumers at a reasonable price, recently FGC has invested and manufactured sencha in our own factory.

FGC uses fresh tea leaves from its tea gardens in the Moc Chau area, which benefits from a good climate and topography, along with self-managed processes and high-tech agricultural techniques. As a result, the tea trees are always in good health and produce fresh, green, delicate tea buds that meet the high standards of traditional Japanese sencha. As per our production policy, fresh bud tea is transported directly to the facility right after harvesting to ensure the best quality of the final sencha product after processing.

With all these advantages, FGC is proud to be one of the leading Vietnamese producers who can bring a  sencha tea closer to consumers in Vietnam as well as in overseas markets.

2. FGC’s Vietnamese sencha tea types

There are many ways people use to classify green tea sencha. It can be classified by the name of the area where sencha green tea is produced or by the harvesting season or by the amount of time for the steaming process. Traditionally, based on the steaming process, there are two different types of sencha green teas: Asamushi and Fukamushi.

  • Asamushi teas: Steamed for 30 to 60 seconds are considered traditional Japanese sencha. After brewing, the tea has a light yellow color and gives a sweet flavor.
  • Fukamushi teas: Steamed for a longer time for 60 to 120 seconds and quite a new sencha type. The tea has dark green color and a stronger flavor and tends to be more earthy than the traditional type.

At FGC we offer three main types of Vietnamese green tea sencha, made based on the Fukamushi tea production method:

3. Vietnamese sencha tea manufacturing process

People started producing sencha just about 300 years ago, which is not a long time ago compared to matcha. And the process has remained the same during the last 300 years.

Sencha production consists of 5 main steps: Growing the tea trees, harvesting, processing, blending, and packaging. But in general tea leaves for producing sencha are not withered. They are steamed to stop the oxidation process, rolled, and dried. This creates a raw or crude tea called Bracha. To become green tea sencha as we know, producers need to refine raw teas. Refining is the process of sorting and reducing moisture.

In FGC’s factory, conforming to the Japanese sencha production process, our Vietnamese sencha green teas are also produced under three main stages: Steaming, rolling, and drying.

The steaming process is the shortest step, just about 30 to 120 seconds but it is the most important stage, determining the quality of the final Vietnamese sencha product. This process helps to stop the oxidation inside the green tea leaves.

Rolling is the longest stage, it takes about 10-13 hours. The rolling stage is a series of similar steps. At first, it starts gently, and steps by step help to dry the extra moisture gained through the steaming process. After that, it gets stronger and stronger and dries to push total inner moisture to the surface of green tea leaves. The rolling stage also helps to break tea leaf cell walls, which is required for water to be able to extract tea components when tea leaves are brewed. Tea leaves are fashioned into elegant straight needles at the end of the rolling process.

The final step is drying. This process takes at least 30 minutes or more and it helps to lower tea leaf moisture to just about 5%. The low moisture percentage ensures that the sencha green tea can be stored and preserved at the best quality.
