For traditional pearls:

  • Pour in 120ml of boiling water and continue to stir. After about 5 minutes, the tapioca starch gradually sticks.
  • Divide the mixture into 4 parts and shape them into a long cylinder about 1 cm diameter. Then, cut into small pieces about 1 cm and turn each one into a circle.
  • Wrap a thin layer of tapioca starch on the surface to prevent the pearls from sticking together.
  • Boil 500ml of water, add all the pearls, adjust the medium heat and cook for 25 minutes.
  • After 25 minutes, turn off the heat, take out the pearls and soak them in cold water right away.
  • After 2 minutes, take it out and let it dry.

For brown sugar pearls, do the next steps:

  • Continue to heat the pan on the stove, add 70g of brown sugar and 50ml of water, boil this mixture.
  • Use a spoon to stir until the brown sugar is dissolved completely in the water.
  • After 5 minutes, add the pearls and stir for another 7 minutes.
  • After the pearls are well-done and the sugar turns black, turn off the heat and let it cool for 30 minutes.
