Matcha is a specialty tea from Japan. It is a finely grounded tea that went through an arduous cultivation process. The tea tree used in matcha has to be grown in cover shade for 3-4 weeks before harvested. After that, it will be steamed and then cooked in a high temperature furnace. After removing the veins and stems, the tea (now called “tencha”) will be grounded finely into matcha. The result is a tea product with a unique taste, full of umami, earthy, nutty sweetness that no other tea can compare.
